BBQ is a process; whereas, the meat is cooked at a lower temperature then normal over wood or charcoal. The idea is to render out the fat and collagen leaving the tasty smoked meat..

Yeah I agree, Fat has It's place, Just not in My diet, My Dad seemed to think that food without fat was bad and tasteless. I tend to disagree with Him. :)

Well in your dad's defense fat does give most of the flavor. This is most evident in Beef Cuts like Waygu and Kobe (if you can afford those) and Prime cuts. The more marbled a Ribeye is the more flavor it will have. This is also one of the many reasons beer tenderloins are wrapped in bacon to make Fillet Mignon or smothered in Cracked Pepper and cognac sauce for Steak Au Poivre. Even pork tenderloins need a little boost, so we tend to stuff them.

My Dad and Grandpa may not have thought so(I never asked, But then I cooked and so did My Mom, She was a great teacher in that). Sorry about the cooking posts. :D

Oh and Fess Parker(He played Daniel Boone on TV years ago) has died, He was 85 and died of natural causes(old age).
