Now you are going to get it. We have whiskey of several varieties here in the States. We have rye whiskey here but most is corn whiskey. Corn whiskey starts as a kind of beer and then is double distilled to about 120 to 160 proof and then is diluted for bottling to about 80 to 94 proof. Bourbon is only produced with that name in Kentucky by law. It is put up in charred oak barrels to age for a few years --perhaps as few as six and on up to twelve are fairly common. Tennessee whiskey is the same thing but has to be called Tennessee whisky. Jack Daniel's and George Dickel are two brands that you may know. Jack Daniels is filtered through apple-wood charcoal that the make on site by burning stacks of apple wood. I like "Evan Williams" because it is smokey and sweet and modestly priced. I bought a big bottle of Johnny Walker Black for Grandpa at Christmas time. Cost a bundle and we drink it after dinner and always drink it neat or over ice.

That reminds me it's time for my annual pilgrimage.

Jack Daniels marketed in the UK is Old No.7 Tennessee sour mash Whiskey.

That is ONE of their brands over here yes, but I suggest you look at their website, I will not link here.

My favourite is Gentleman Jack Doubled Mellowed Tennessee Whiskey.

Trippin' down the bourbon trail I ran across Jefferson's Ocean. Sloshing around in barrels on a ship vs. sitting stagnate in warehouse has created some delightful drink. Voyage #16 is my favorite. Nice long sweet finish. Sampled most of them but the first few voyages.

It is corn whiskey, without the aging in a barrel.
I keep a jar in the refrigerator, take a few swigs, and am good to go.....

There is a liquor store co-joined with my local Costco--it's run by a former colleague of mine from Northern Telecom. As I was passing by there was a tasting going on with a new brand of Rock and Rye. I tried a sip and was reminded of what we drank in the Army about 50 years ago. Bought a bottle. Also am a big fan of Old-fashioneds ,which only my father could make properly. Well upon reading the ingredients --Rock, candy, orange bitters etc I realized that adding a little soda water, cherry juice, slice of lemon and orange would do the trick. Sure enough it was pretty authentic. I will buy some more and consider it to be a mix for making an old fashioned.

Do you have a favorite port house? Mine was Rocha but they were bought out by Barros. I've sampled all the port houses, 30+, I can get my hands on. At least 20 year old and with 40 year preferred. Anything less and they get too grapey for me. Having played the tawny port houses out I got started on whisky/whiskey sampling/tasting.

Sorry about the cut back. I keep waiting for them to tell me (72) to cut back. Gettin' it while I can. ;-) ;-)

A flight of 40's for 65th birthday tasting. Agree Cockburns tastes like Australian port, raisins with seeds. wink wink I'd say the same for Sandeman but their 40 year old was a surprising delight.


After the tawny run I started a bottle quest. This was the first bottle row.

Even out here in the Aussie bush we've been recycling all that stuff for a couple of decades now, and more than a few decades down in old Sydney town including green waste. :-)

The UK is quite hot on recycling glass, paper, tins, plastics etc, what is left goes to landfill or incinerators. South London has incinerators shredders, granulator plants etc. In more rural areas it costs money to transport refuse elsewhere.

East Suffolk Council have recycling bins that they come and collect every two weels , brown bin for garden waste and a blue bin for paper , plastics , metals etc and theres loads of bottle banks around , there's even one in my village .
Ain't like the world end when you leave London and people ( Yoakles as you probably see us ;-) ) are probably clued up than you bunch of " city " dwellers ;-);-)

The wife was in the wine industry. It is basically her chiller/tasting room setup. That's 25+ years of corks, a little over 4K. She can recycle them for money when she decides too.

The wife held wine tastings for her wine business back in the day. Love those owner/employee discounts. The Bollinger has been passed on to the loo long ago. If you noticed in photo the room has a chiller and is kept cool. Wife is into champagne and vintage Grand Anne is her favorite and I get her one on her birthday every year. I prefer a Paul Roger Churchill myself.

Just pulled the trigger on another Bushmills 21, one of my all time favorites. Love that triple cask.

I use to live in Denham, Bucks from '64 to '67. My local was the Green Man in Denham. They try here but they just don't have pubs/locals like you folks have. Visited again in 2000.
