Due to Mom's confusion and weak condition, everyone is coming here Thursday. We do the usual. Suz & I prepare Turkey, Squash, Stuffing, Sweet & Mashed Potatoes. Suz's Aunt brings Jello, Cranberries, Rolls and Deviled Eggs. Suz's sister Teresa brings Dessert. We bought a special Pecan Pie as it's my mom's favorite. |

Last year I charcoal grilled the turkey, and it was the best turkey I ever ate. You make me want to buy a bigger charcoal grill! I've never tried cooking an entire turkey on the grill, but I can only imagine how good it tastes. Everything is better on charcoal grills. |

Does anybody use the plastic bag of turkey innards? I do too, A bit of variety is good for them, I certainly would not like to be fed the same slop out of a tin or packet every day. I'm from Steve's school of cooking so normally I'd have the Turkey slow-smoking with Apple wood-chips on the Charcoal BBQ by now (It's almost 10 o'clock in the morning over here). But tomorrow is my Mom's 80th Birthday and it's going to be a big shindig so we are delaying Thanksgiving for... Friday night! I'll still get to fire up the BBQ but since my Mother is in charge (and has been prepping for 3 days already) she's in charge of the menu and has put me in charge of making the Thanksgiving... ribs! :D Ribs don't exist in Greece and she wants to show them off to all her friends :) I'll try and grab a few photos. - - - - - - Random: - So I take it no-one here brines their bird? - Ain't just for dogs. My cats go CRAZY over giblets! - Most underrated kitchen gadget: the ThermaPen. I highly recommend anyone/everyone who loves to cook, get one (or similar) Have a lovely Thanksgiving everybody! |

Our turkey is cooked, and it is as good as last year. We won't eat for several hours, but the hard part is done. With just two of us, we don't have to prepare anything. No turkey, only caciucco and bacalao. I love fish with white wine from Friuli. It used to be called Tocai, but the Hungarians protested, having a red wine called Tokay. Now our white is called Friulano. Tullio |

My mother would put the turkey parts, including the neck, in water to make broth, which would then be used to make gravy. The neck would be tossed and the other parts chopped up and added to the stuffing, along with whole wheat bread, sweated celery, onions and mushrooms, an egg or two, and various herbs and spices (lots of sage). In later years, we added pork sausage. Excess broth would be poured over the excess stuffing that was cooked in a casserole. Other than that, we didn't do anything too exotic. Mashed and sweet potatoes, she liked Brussels sprouts, canned jellied cranberry sauce (the only way I like cranberries). As her health declined, I did more and more of the cooking. Since then, I have not made a whole turkey again. The year she passed, my aunt took my grandmother and me to a restaurant. The next year, a friend invited me to his sister in law's house; the invitation remains open, but there's too much drama and cigarette smoke for me. Some of the last few years, I have still made stuffing, deleting the parts and fungi, adding homemade cornbread, and using store bought low-sodium broth. Then I'd get a lump of turkey frozen in a foil pan and a can of cranberry sauce, plus make mashed potatoes, and a frozen spinach souffle to say I had a vegetable. This year, I made a frozen pizza, enhanced with extra cheese, cheese, sausage, bacon, cheese, and cheese. BTW, at work, the staff lunch is a full turkey dinner one week before Thanksgiving. [edit] I baked a frozen Dutch apple pie Wednesday night. There wasn't room for it in the freezer, so it sat in the fridge for a few days. I baked it for 40 minutes instead of the instructed "50 and check it every 5" and it came out very nicely. I'll try to remember to do it that way again next time. My relatives Turkey Dinner was very good, I didn't get to have any mashed potatoes there, but I did bring home leftovers, enough for two days. My youngest Niece and Her Mom made the thanksgiving dinner, We not only think She's the Best, She won 1st place(a Blue Ribbon) in a Pie Baking Contest that She entered, except for the filling everything else about Her pumpkin pie was homemade, from scratch, just like My Mom used to do. OK well here's the prep :) Like I said, ribs don't really exist in Greece so this cut is almost 10 pounds of meat! And about 50cm :) I had to slightly squeeze it onto my 22" grill. I'm guessing it's the Spare Ribs & Rib Tips sans the Baby Backs, plus no meat shaved off the bones. Prep was just a bit of meat-trimming, some paprika, garlic granules, and Aleppo chili flakes the day before. Salt, brown sugar, milled black pepper, and a little cumin right before grilling. Here's what it looked like after ~8hrs on the Weber Kettle: (Not photogenic and out-of-focus to boot... but it's a good thing I can't post their smell :) Anyone else take any Thanksgiving pics? And again, no-one brines their bird? |

Those ribs look awesome. My sister-in-law took a picture of Eric and your's truly by the turkey, but she hasn't emailed me the picture yet. Now I'm prepping for a family cookie party Eric and I host each year. I am doing things today like chopping nuts and toasting coconut. It is taking every ounce of willpower I have to not eat up all the toasted coconut on the baking sheet. Gosh, I love the stuff!!! |

It takes me about 4 hours to decorate our tree. We use a nice silk artificial tree, and last year I bought LED light strings which I love because they burn cheaper and brighter and last a lot longer than the old incandescents.
