Several of you have posted here and there that you are caring for loved ones who are elderly and/or ill. Often our loved ones are eating poorly and we want to get a little meat on their bones. When my grandmother was in a nursing home, she only wanted the fruit plate for her meals. Because they couldn't get her to order anything else, they keep a box of cracker and a jar of peanut butter by her bed side and use that to get some protein in her diet. When my roommate was fighting cancer, the cemo destroyed her sense of taste. About the only thing she could taste was sweet and everything else tasted like cardboard. I worked out a menu that wasn't exactly balanced but it did a pretty good job of putting weight back on her. It used a fair amount of diary products and if you are interested in a copy, fire off a PM to me and I will return it the same way as it is in a flat file. I check the PM several time a day most days but I don't always get through all the treads so PM is the fastest way to contact me. |

Weird cocktail from Finland. It can be a lot of jokes about "50 shades of whitefish" and stuff, but seriously - in Lapland, it is impossible not to try this fish. It's unavoidable. Cocktail "Wise whitefish", 40 grams of vodka, salted whitefish. Dip the rim of the glass in lemon juice and salt, pour the vodka and put on top of whitefish. Drink. And the fried whitefish and potatoes, whitefish caviar with sour cream, tartar of smoked whitefish, festive fish pie (from cisco), cisco, whitefish. |

My mother and I like a basic little thing that is a kale & cottage cheese casserole. You just put frozen chopped kale and cottage cheese in a loaf pan and bake. ~Maybe put some parmesan on top. She never added a lot in the spice dept, but you can certainly experiment. ;~) The mind is a weird and mysterious place |

Looks like something I have served. It was back when I had a job helping the homeless and disadvantaged. Somebody donated several restaurant service size "Chillie's" cheddar cheese soup packs. I added some broccoli and cauliflower with it. And as Emeril would put it. "BAMM!!" It was good. |

Kale here are mostly used as a decoration of the pig at christmas. I asked my GF about it and she told me that kale tastes like a mixture of spinnach and cabbage. Sounds great to add some cheese on top:) To me it's seems perfect together with fish like makerell or smoked meat. |
