Picking up on some happier moments, I promised to report on Thanksgiving dinner. It was real good! :]]

The Menu:


Appetizer:

Pleasant Valley Maple Roasted Parsnip Veloute
Bay of Fundy Smoked Lobster Tail Medallions
Riverview Herb Tarragon Emulsion


Entre:

Roast Turkey with Traditional Bread Stuffing
Cranberry Preserve Sauce and Pan Gravy
Buttermilk Mashed Potato
Honey Glazed Baby Carrots and Aparagus


Desert:

Harvest Pumpkin cheesecake with a Shortbread base
Carmelized Pears


The Turkey dinner was a nice traditional one, what you'd expect. What really surprised me was the Parsnip Veloute (ie soup). I never thought I'd like parsnip but this soup was exceptional. It was a rich, creamy soup (like vichysouise, only wonderfully sweet. Into that went a whole lobster tail's worth of thick medallions. Man! That was yummy! :]]
