Well, we had a beautiful break in the clouds to reveal blue sky! Fantastic clear visibility with this non-polluted Arctic air. Good to be reminded of the good scenery all around. Even felt spring-like warm in the sun with the flat calm air. Still lots of water and mud everywhere. By 'eck it's b... boggy. In places, quite a few trees have fallen over in the windy rain with the earth so squishy soft. Was well impressed that the farmer had nicely cleared access. Then saw further along why: He's been digging a new deeper ditch to try to shift some of the sogginess sooner. Meanwhile, the road is still closed until a retaining wall is rebuilt. There must be a bit of an overdose of 'elf 'n' safety for the elaborate barricades, added scaffolding, and even a portaloo! They still have a goodly pile of sandstone blocks to heft yet... They still have a goodly pile of sandstone blocks to heft yet... And sure enough, the notice has been updated to say that another week yet is needed to complete. Looking at the job, no surprise. Also there's a sneaky suspicion that the job has been split amongst multiple groups to each seperately do their one little bit. There's likely a bit of a gap between the jobs done for all the various bits... What happened to the days of the one work gang doing all the job in one go? Stay warm folks! Whole wheat good. Steady on the molasses?! I had a series of bread making where the bread was turning out 'German style'... Still good but unexpectedly heavy and only partially risen. A few experiments later and... Ok, so I'd reduced the amount of salt in the mix. Reading up on the effects of the various ingredients and... The salt appears to be needed for the yeast to do their act and to time how quickly they do their act to raise the bread... Appropriate salt back into the mix and all is fluffy good! (Also, it is very good to enjoy fresh bread that has only the essential ingredients!!) Essential ingredients: flour, oil, salt, water,yeast UK supermarket bread (mid price) Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin, Water, Yeast, Salt, Soya Flour, Flour Treatment Agent: Ascorbic Acid. or even (cheap): Wheat Flour, Calcium Carbonate, Iron, Niacin (B3), Thiamin (B1)], Water, Yeast, Salt, Vegetable Oils [Rapeseed Oil, Palm Oil], Spirit Vinegar, Preservative (Calcium Propionate), Soya Flour, Emulsifiers (Mono- and Diacetyl Tartaric Acid Esters of Mono- and Diglycerides of Fatty Acids, Mono- and Diglycerides of Fatty Acids), Flour Treatment Agent (Ascorbic Acid) So we start with a very simple loaf, that has a distinctive flavour, but won't keep for a long time (this is what freezers are for), or you have a product that contains stuff that came out of a chemical factory, has a very bland flavour and keeps for a long time.
