The Green was Aldebaran whiskey.

The bottle of "green", that Scotty and Picard shared on the mockup of the Enterprise NCC-1701 in the Next Generation episode "Relics", was a type of Scotch Whiskey. I don't remember if it was revealed what type, someone else may know.

I rather fancy Romulan Ale.... >:-)
