I've installed the latest driver for my Quadro FX 4800 from the NVIDIA website. The machine is running Windows 10 Pro 64 bit. The driver version listed in the adapter properties is 21.21.13.4200. Is there a more recent driver, or id something else going on?

Just for the sake of completeness, this is the notice that is being posted:
"SETI@home: Notice from server
NVIDIA GPU: Upgrade to the latest driver to process tasks using your computer's GPU
4/13/2018 12:34:52 AM"

GPU is no longer being used. The task list has the following message:

'SETI@Home GPU missing, Ready to start (0.0835 CPUs + 1 NVIDIA GPU)'

Does anyone know what is happening?

The most common cause is that Windows 10 updated the drivers for your GPU and the drivers from MS doesn't contain the components needed to do the calculations. So get a clean set of drivers from nVida, do a "clean" installation (an option under "advanced", about the second or third screen in), and turn off Windows drivers updates.

Ironically, the SETI@home server is sending the upgrade your driver messages again.
