I'd like to know where to track my own progress on a graph, much like the Statistics Tab in BOINC Manager, that shows all/or more length of time, not just 30 days at a time.

Online it is possible by external "stat-sites":
http://boincstats.com/en/stats/0/user/detail/143873/charts
http://stats.free-dc.org/stats.php?page=userbycpid&cpid=67f73e7c58b2adbc0138211cddf2299c

It is also possible to change the default 30 days that are kept locally
The following will keep 10 years:
<cc_config>
   <log_flags>
   </log_flags>

   <options>
      <save_stats_days>3650</save_stats_days>
   </options>
</cc_config>

Read about cc_config.xml
