Just to review some of the clues. Exoskeletons are involved, ie, crustaceans which are not fish. The latest pic of the device shows a setting for lobster and crab. Salt water is involved because electricity is not conducted through fresh water very well. No cooking is involved. A posh cook uses one in the kitchen of his very posh restaurant in France.

When crab or lobster are just tossed live into the water, they(not surprisingly) dirty the water.. which becomes part of the seasonings. The difference in taste is not your imagination.

I thought I read where Julia Child just whacks them on the head before dunking them. It also saves from boiling water being splashed on you I've been told or read.

I might try one properly dispatched now that I know the difference but it still looks like a big insect.
