Just curious, can you set seti to only use the GPU, while the CPU does Rosetta or another boinc project?

Yes, if you're using a 6.10.+ version of Boinc - in Your Account, go into Seti@Home preferences and set
Use CPU
Enforced by version 6.10+
to no and
Use NVIDIA GPU
Enforced by version 6.10+
to Y for Nvidia.
If you're using ATI, you'll be using an app_info file, just remove any CPU parts of the file.
Then for the other project, set the GPU part to N (if the project actually has a GPU app...).
