Will SETI@home run while Folding@home is running?
Especially on the setting where SETI@home "will run when your computer is idle." Since Folding@home is running will SETI@home ever run since my computer is never idle.

The BOINC Manager will divide your computer's time evenly. It is impossible to run two clients side by side at the same time unless you have a multi-CPU or multicore system, but the current Manager isn't written to have two projects run side by side (it will run one project for one hour and then the other the next, as a rough example).

Folding@Home doesn't appear to use BOINC, so if you tried to run both of them, they'd be competing with each other for CPU time. I don't know the priority that F@H runs on, but odds are BOINC and SETI@Home would take a back seat, and rarely get any time.

If you use XP you could run Seti@home in one user account on the computer and folding@home in another user account I guess, as XP divides the computer resources between the user accounts.
