Is there a way I can set preferences to keep processing the stored days of work if I go offline for a day or so? I'm using a laptop and cell phone for internet connection. The cell phone is not always close by for internet connectivity but is always near by at some point within the day or so. Whenever the cell is not nearby, and thus the laptop has no internet connection, processing stops. I'd like processing to continue.

It might be that I'm processing more units than seti allows me to store and I stop processing because I've processed everything. I don't know how to check that.

BOINC is designed to work that way. You can either setup a connection schedule if you know when you are going to connect, or just let BOINC connect when it can.
Setting your cache to 3 days, plus an additional 0.5 should enable you to have a couple of days work available when you are off-line.

The setting you've chosen is a very bad idea - use the one's I've suggested, or in that pattern, make sure that the "additional days" is a small number, less than one, otherwise you may not get work every time you connect.
Crudely speaking, the "additional days" is the interval between attempts to connect to the server for work and in your situation you want to be able to request for new work every time you connect, not wait a few off-line/on-line cycles which is the most probable outcome of your settings.
