I am currently running 3 projects: Einstein, Rosetta and Seti. In the BOINC manager, under the Tasks tab, when I highlight a Rosetta or Einstein task while it's running, the Show graphics button under the Commands list becomes active. However, when I highlight a Seti task that's running, the Show graphics button does not become active. I can't find a setting to change this. What's going on?
A lack of planning on your part does not constitute an emergency on my part!

Only tasks calculated on the CPU have the graphics app. Task that are calculated on the GPU do not. So check it on any tasks in BOINC Manager that don't run on the GPU.
