G'day everyone, from a cool, damp overcast day in the highlands down under.

Seeing as it's the start of a long weekend here and the solar heating system for the shed is on the blink again (no sun, no work) I decided to light the wood heater downstairs, 40mins later I was idling it down as the whole 6 bay shed hit 20C (22C now and 10C, but feels like 8C, outside).

The jukebox is now rocking the shed and I've declared it another "Dark'n'Stormy" day again.

Starting off early myself, we have a projected high of 97f with feels like over 100.

Feels like an IPA sort of day!

G'morning everyone, from not a bad winter's day in the highlands down under.

As I take a coffee break after getting my brewroom ready to bottle 54L of ginger beer with the new and improved recipe testing out at 6% alc. content (up 1% from the old recipe) so it should be an interesting taste test in 2 months time.

Tomorrow morning I'll put another ginger beer brew down (that will fill the rest of my empty ginger beer bottles) as well as another spirit wash and that will have my brewroom fully stocked up to overflowing again.

After 2.5hrs of slaving away over a 3 ring gas burner I've finally got 2 brews going and now I'm heading up the hill for a few cold beers while my shed cools down.

Well the brewroom was full of yeast farts this morning and I think that it's the first time that I've had a ginger beer and a spirit wash going at the same time (it's certainly a different aroma this time), I just both got brews sealed so they're airlocks are bubbling away like crazy now.

It does seem that way these days as several of us beer drinkers here have passed away over the last few years. :-(

I'm a lager person so at home I brew Coopers Lager (6.1%) and when I'm out it's Tooheys New (4.6%), but I also brew Ginger Beer (new recipe is 6%, up from 5%) and all sorts of spirits and liquors (@ 40%).

My brew kits are also double the usual size so that I can do 2 brews at once (whether it's beer, ginger beer or spirit washes).

Well there's still 2hrs to go here until Beer O'clock so I better go and find something else to do until then.

G'morning everyone, from a frosty winter start in the highlands down under.

Well it's another great morning to be in my brewroom bottling 6 doz. 750ml bottles of ginger beer and the room is now ready for me to turn on the heat, but I'm having a coffee break first before that happens.

That will result in me having a full stock of 38 doz. bottles of lager and 12.5 doz. bottles of ginger beer, so that just leaves that spirit wash to do and that should be ready in the next few days to process.

Anyhow, I better get into this coffee and then get going as I don't want to be too late for LLB. ;-)

We have to let it all age Admiral. ;-)

The stack of beer (there's 6doz. 750ml bottles per stack) that's just being finished is just over 11 months old and that ginger beer will have to be left for at least 2 months before I try that. :-)

It's only the spirits that you can get straight into here once it's been watered down.

Anyhow I better go and prime those 72 bottles before I fill and cap them. ;-)

Well here's something to ponder Admiral, my 468 beer bottles and my 156 ginger beer bottles on average get refilled once every year and that's been going on for over 28yrs now, so can you imagine all the bottle caps that I've been through? :-O

G'day everyone, from a cold and blustery winter's day in the highlands down under.

Well it might be 12C (feels like 3C) outside a few of us are sitting about the shed enjoying a few beers with the fireplace keeping it at a nice 27C with the door and windows (that arn't facing into the wind) open as we await the Antarctic blast that's just 2-3hrs away.

I always forget about the other hemisphere! Over here we are going to be 35c with a feels like of 40c. Started a little early with a beer from a local brewery, Karbach. Drinking their "Big and Bright IPA" quite tasty for a 6% ipa.

G'day everyone, from our coldest start in the highlands down under this winter.

It kicked off here -10C (felt like -14C) so it's no wonder that this last spirit wash is taking a bit longer to fully brewed than usual, but it'll be processed sometime over this weekend.

Anyhow, I'm about to walk around to the post office to pick up a parcel of goodies and then it'll be P.O.E.T.S. Day Beer O'clock at the top pub on my way back. :-D

Enjoy your drinks as I know I'll be enjoying mine. ;-)

G'morning everyone, from a typical winter's start in the highlands down under.

It's been another busy week here, but I finally processed that spirit wash yesterday. It was a long day and the process time and amount varies greatly on a few temp factors, but getting 18.75L @ 40% from a 50L wash is a record for me (by 750ml) and in a very reasonable time. :-D

Anyhow, I better finish this coffee break and get some more things done before Beer O'clock gets here. ;-)

G'morning everyone, from an unusually warm start in the highlands down under.

We've had a pretty warm week here, but that will be over after tomorrow as more winterish type weather returns for the weekend. I have all the ingredients ready for another beer brew and spirit wash to be put down and Saturday (or Sunday) morning will be fine for firing up my big gas ring burner to get those brews ready to bubble away.

Anyhow, it's time for another coffee as there's still 3.5hrs to go until Beer O'clock and I'll see if I can think something up to fill in the time.

Now that the garbage bin has been brought in and another couple of pieces of wood put in the wood heater I'm now just waiting on my 2 fermenter kits to finish sterilising so I can then fire up the ring burner and start dissolving dextrose and sugar for these 2 brews.

I should have that all done by Beer O'clock, but for now I'll go and make myself a coffee.
