Well that's yet another 18L of 40%abv ethyl alcohol from another 50L wash, I'm getting more consistent at it now. :-)

I also mixed up a range of spirits that'll be ready for the holiday season so I'm covered there. ;-)

I should be bottling beer on Wednesday.

Well bottling beer today isn't going to happen as a last minute change in vehicles for yesterday's road trip didn't go down well on the old back so the brewroom didn't get cleaned up on returning from it, but I'll slowly work on doing that today as the old spine is still not feeling that good.

My little mate decided that he'd get 2 x 1000L IBC's to make up 4 huge wicking tubs for his aging mum and as the Falcon can't do that without the box trailer on (which I wasn't going to drag around for 200kms, as well as finding parking spots for the lot, before doing 40km with the IBC's onboard) so the old LWB Isuzu ute got used instead and it certainly doesn't ride anywhere near as smoothly as the old Ford does.

Anyhow I'll get a 2nd coffee in before I start on that job.

Well I just rearranged my beer crate stacks to get the stack that I bottled up yesterday to the back and cleaned up the brewroom ready for me to get back in there to scrub out those 2 kits, sterilise them and then get them started up again with another lager brew and spirit wash.

It's far too damp outside to do much else around here.

[edit] Well that was something that I didn't plan ahead for, I don't have enough blocks of ice to do the spirit with, so I'll do those brews tomorrow morning as I'll certainly have more than enough then, but I did get the kits scrubbed out at least.

The heat is well and truly on this cool and damp morning as the cans of beer wort are warmed up as I now wait for the water to boil to dissolve the dextrose in before adding the wort. Then there's the 16kg of sugar for the spirit was to do.

Well that's the easy brew done with until tomorrow morning as the 1st batch of 9kg of sugar is being dissolved and it was getting so warm and muggy in here I was forced to open the door to let some cool air back inside.

Now that both kits are sealed up after an overnight out gassing I'll just have to see how things go in 7 days for the beer brew and 10 days for the wash. ;-)

I just finished cleaning up the brewroom after last night's big cook up (I got 5 meals out of it in the freezer) and if I can get it as cool inside as I got it this morning I'll be happy firing up the ring burner tomorrow morning to bottle that well overdue brew up. It should still be ok, but if it doesn't smell right it can always go through the still.

Anyhow seeing as I also just restocked the beer fridge I better have a few icy beers and a feed at the pub today just to keep things clean and tidy for tomorrow.

I did well here this morning as the heat went off at 8am and I'd finished playing in the boiling water by 8:30am while being just in time to close the heat from downstairs out. Now I'm just trying to get rid of the extra humidity that I produced in here before totally locking the heat out by closing this back window.

Now for a coffee break so those bottles and myself can cool down before the next step.

I'm running a little late here this morning, but as soon as I finish my 2nd coffee for the morning the heat will be back on again in the brewroom.

Thankfully the still doesn't produce the copious amounts of heat that the ring burner does, but it does have a lot longer to run to do the job (though it does run on solar power instead of gas).

Well that's that spirit wash finally run through the still, but I havn't started filtering it as it's 31C downstairs where the filter is setup and the 25C (felt like 22C) upstairs was too good to ruin.

Anyhow I'll likely that raw spirit through the charcoal and water it down later on this evening after a feed and a spinal reset.

I was going to do a quick trip into town tomorrow morning, but that can wait until Friday if I do the filtering into the wee hours of P.O.E.T.S. Day.

Well the extra 5 day sit didn't hurt that 50L spirit wash, in fact it might have produced the lowest sludge level yet, but I was worried about the temp that it was coming out of the still at no matter what I did though I shouldn't have done as I produced 20L @ 40% alc/vol which beats my previous record of 19.5L.

Anyhow 2 more beer brews and I'll have a fully stocked brewroom yet again, but it won't be until Sunday morning before I start another off if I can get the room temp down far enough as well as getting started early enough (the next 2 mornings will be far too warm going on this morning's experience).

No point waiting any longer, the beer brew kit is sterilising and the heat will be back on in the brewroom in around 30mins as the temp is not too bad inside this morning and it shouldn't take too much to cool it down again seeing as I'm only doing 1 brew this time.

That's another yeast fest started that can be bottled in 7-10 days.

1 more brew after that and then I can take a break again from brewing for several weeks (maybe even a couple of months). ;-)
