At one stage I was running 3 "table tops". Each with 3 video cards.
Cable management wasn't a problem, I ran the networking through a table mounted 4 port switch to the main network and controlled them with VNC, so there was only the power supply cables to worry about.

My biggest cruncher is an open frame device.
Periodically I will run a trial system that is held together with tape and tie wraps.
As you say cable management can be an issue, but that can be overcome using cable ties.

I have one cruncher which is just a mobo laying flat, no case. It works just fine.
Have it on some spacers to allow airflow to the back of the mobo to help avoid possible hot spots. CPU air cooler does not have to deal with heat build up inside of a case, and the GPU always has ambient air to cool with.
It's up high enough that the kitties can't get at it, and I have no visitors, so I don't care how neat and tidy it looks (or does not.....LOL).
