Those spring loaded clamps look like holders so the pot and lid don't go anywhere.
I have a commercial sized dryer at work that uses those clamps to hold a maintenance cabinet door closed.

Yes, the clamps hold the pot down and the lid on when in use.

Not a centrifuge, but it does have rotating parts.
and it isn't actually medical, that was just the closest compared to food/washing that had been guessed.

Hint, it does its work dry.
