As for your earlier suggestion of "pizza by mortar", a little on the haphazard side of accurate, but great fun and VERY fast. Now just got to work out how to get a 24in pizza into a 3in mortar round for a quick test shot :-0

Cracker thin crust; wood fired pizza oven; bechamel sauce; sauteed pancetta in small dice; caramelized onions; a little goat cheese; sliced ripe fresh figs... when it comes out of the oven, top with a sprinkling of arugula... Heaven!!!!!!!!!!!!

I am not a big fan of figs, but that does sound yummy.

That is a gorgeous stuffed pizza.

My favorite happens to be the place closest to my home (not counting the Caesar's). I don't go there as often as I used to, though. I love their thin crust. I used to love their stuffed too, but in the last few years I've come to realize it's too much crust and not enough cheese.

I had a coupon for half off a pizza from a place in the next town and it was expiring yesterday, so I used it to try their stuffed. Sausage, spinach, and bacon. It's good. I just had some more of it for lunch. I will have to try their thin one of these days too.

I used to make my own, too. Normally, I'd use a big cookie sheet with fresh Italian sausage from the grocery store and sauce from a jar. In the last couple of years my mother was alive, I'd make a double batch of dough and make her a small one on the cookie sheet with the lowest sodium sauce I could find, low sodium mozzarella, and fresh mushrooms and onions. Then I would make myself a stuffed with sausage, bacon, frozen spinach, whatever low sodium cheese was left and a lot of regular cheese, and probably the leftover sauce too. I continued to try my hand at stuffed, but I haven't got the technique down yet.

I had a Freschetta sausage and pepperoni pizza, it was new years eve, so I also bought a soda, Mtn Dew of course, the caffeine kept Me wired until I fell asleep after 2am, the pizza didn't cause Me as many problems as the Staters pizza did, maybe that was cause of the soda being diuretic, I'll have to buy one again sometime without any soda and see what happens then to know for sure. Best of all the pizza cost $3.99, the same as the store brand.

Thanks Gordon Lowe. I only put salt on My eggs, for years I used lite salt, now I just use regular salt, not the iodized type of course. So yeah I can relate on the sensitivity, I'm sensitive to caffeine too, I didn't used to be, in Canada Pepsi supposedly sells Mtn Dew without caffeine, I wish that was available in the US, but it's not.

Turns out one of the checkers said the same thing about the price, I think this brand does have less salt, how much I don't know, as I had a 2nd one and I had less problems, I've got one left. $3.99 for a large thick crust, pepperoni and sausage with cheese & sauce, yum. I bake it on a cookie sheet for 28 minutes, but the rack where I place the pizza at, is in a lower position so that I could use a larger pan, this works for Me.

I've never seen Gino's in the stores here. There's so many frozen pizzas in the grocery already, it's hard to get a piece of freezer real estate on the aisle. Tombstone is my favorite in that dept.

We have Tombstone, Freschetta, Staters, DiGiorno, California Pizza Kitchen, Red Barron and that's at Staters, I don't know about VONS of course, I may have to wander down that aisle next time I'm at VONS on Jan 30th.

As for pizza, I love a thin crust, Cheese, Mushrooms, Ham, Onions,Peppers and pepporoni.
Last summer though I tried the BBQ pizza. You buy the crust, Add your own toppings and throw them on the grill. The wife and I like them.
When I do eat frozen pizza, Its, Tombstone, Degernos, Mama Celeste or Red Barron.
If we go out its either Little Ceasers or Pizza Hut.
Back when I was doing my Air Force Fire Fighting training. Every Saturday was a hot fresh pizza and an RC cola. From the pizza man. Hed stick his head in the barracks and yell, HEY HEY Pizza Pop. That pizza shop just outseide the bases gates must have made a fortune.

I'm not a great fan of frozen pizza.

One of the guys tends to bring Little Ceaser's or Pizza Hut pizza to the VFW monthly social, but I've come to prefer Mountain Mike's, a local chain. They do a lunch buffet Monday-Friday, and a dinner buffet on Wednesdays that I usually visit. I like the variety. Other times I get take-and-bake from Papa Murphy's or a local outfit, Trader's U-Bake.

When I worked in the Italian Restraunt back in the 70s, we didn't offer pizza on the menu, but big John Finni would do a Northern Italian pizza upon request. Baked on a rectangular pan, we used the same tomato-meat sauce as on the pasta dishes, salami, mushrooms, onions, couple kinds of cheese. It was pretty good, but different from what I was used to.

Now we have "artisan" pizza places that make pizza like Angela described, baked in wood-fired ovens. Mostly vegetables, not many with meats on them. Mediterranean-style, I guess. Good, but not the style I've eaten most of my life. I am an unabashed omnivore - my diet includes meat.

I like Meat and Veggies, though I draw the line at liver, like My Mom did, neither of us liked liver.
