If an egg is reasonably fresh, it is easy to just pull the yolk away from the white. If you broke a yolk in that separator and yolk ran out of the nose, you would have to scrub the whole separator out completely before you used it to separate another egg. Two weekends ago I had need of a couple dozen egg yolks for batches of lemon curd and vanilla buttercream. It took me 26 eggs to get 24 yolks separated from 24 whites. The two eggs with broken yolks I simply scrambled for lunch. The 24 left over whites I used the next weekend in angel food cakes. Cupboard/drawer space would be wasted on an egg separator.
