Just to review some of the clues. Exoskeletons are involved, ie, crustaceans which are not fish. The latest pic of the device shows a setting for lobster and crab. Salt water is involved because electricity is not conducted through fresh water very well. No cooking is involved. A posh cook uses one in the kitchen of his very posh restaurant in France.

I can easily taste the difference in other meats. Instant dispatch is the only way and it tastes best.

When crab or lobster are just tossed live into the water, they(not surprisingly) dirty the water.. which becomes part of the seasonings. The difference in taste is not your imagination.
