Sunshine heats the water and steeps the tea slowly. Gives a smoother flavor than a quick dip in boiling water. On a warm California summer day, 2-3 hours in the sun gets it plenty hot.

And I always thought it was brewed as usual, and then iced.

It's called sun tea, since the sun heats the water to steep the tea. Used to make 2-3 gallons for family gatherings on holidays. Put the jars out in the morning, be ready to drink by lunchtime.

Nowadays, I keep a gallon jug of AriZona Raspberry Iced Tea in the refrigerator, or pick up a bottle of Snapple Raspberry or Lemon Iced Tea.

lol. ok, warm extraction then. yeah a few hours in full californian summer sunshine should heat up liquid in a glass jar nicely.

Probably similar to the difference in taste you get between using boiling water on your green tea (chinese method) or cooling the water to ~70C (japanese method).

If the tea was brewed hot (boiling water) then infused and allowed to go cold. It would probably be very strong when refrigerated ...

I thought Lipton stopped promoting sun tea because of some concern about salmonella or botulism or something like that which is not killed, perhaps even thrives, in that kind of environment. Not that the disease would come from their product, but if your jar isn't completely sanitized whatever is in it would multiply.

It has 5 calories a serving, at Vons I've seen it for $2.50 a container, today I got 4 for $3.79 each...
