With the current server-side problems in distributing work units, do we create more load for the servers by just letting the client retry on its own schedule, or would it cause significantly less traffic to turn it off for a few days? (Maybe start running Classic again, like the web site suggests.)

It is your choice. Each client should only be connecting once an hour or so. As long as you are not having other difficulties like the current problem with downloading a boatload of predictor WUs, I would tend to keep it running. This will tend to test the restart logic that the BOINC servers use. Expect that when the servers do come on line, they will run out of WUs periodically, and have to play catch up.
