Will any projects ever be able to take advantage of the multiple cores on a video card?

Yes, of course, they are all used in parallel for one task at most projects.

I think there's one project that uses the cores for multiple tasks (not 48 though).

You already crunch CUDA WUs on your two nVIDIA GPUs.
