Instead of painting the car, a better money inversion is to make sure you have good tyres. I presume an unstable weather condition is usual in Canada with lots of rainy days and even snow and cold to prevent aquaplaning....

On a black car, you see every speck of dust, dirt etc. I agree with the majority, the paint job looks good. So save your money for regular maintenance.

Flat black would give you that nice road warrior look, with some nice flat steelies to match.
I've owned about 6 MK1's, not the US built Westmoreland ones though, great fun to drive.
GTI would be 1.8 gas 'big valve head', not diesel.
They were all the rage back in the day. Would have people calling for these heads to bolt onto their regular rabbits to increase air flow, along with headers etc. I work in a "junk yard" (auto recycler) and haven't seen one come through in about 5 years or so on Canada's left coast. Getting hard to find parts for them up here.

Leave it as it is. In the U.K., that car is known as the Golf GTI and is regarded by many afficianados as one of the best 'hot hatches' made - indeed it is preferable to the VR6!

J.C. Whitney might have something as well. I know we used to be able to order random parts of rold vehicles from them, but it has been many years since I have tried.
