beef & chicken shawarma . . .


. . . Strips of marinated and nicely charbroiled beef and chicken (rotisserie - very moist)

- mildly marinated and seasoned and grilled to perfection,

with just the right amount of charring;

> Marinated and spiced slices of Beef stacked on a spit and grilled against an open fire

< Raw meat is placed on large, rotating cones. As it rotates, the meat is cooked by a heat source that is located behind the actual cone.

The meat slowly falls off or is thinly sliced by a chef with a large knife. It can take several hours to fully cook:




with delici-yoso Garlic Paste (Toum), very garlicky, and yet without the bitter bite of garlic; (for the chicken)

with tahini (for the beef) - which is a Middle Eastern paste made of sesame seeds and olive oil;


and finally - some warm pita finished off with a bit of lettuce, plum tomatoes

& Vidalia onion - sliced & grilled lightly brown (a sweet onion of certain varieties - this one is a white vidalia)


. . . served with a side of hummus:



> Ingrediants:

4 garlic cloves
1 teaspoon salt
two 1-pound 3-ounce cans chick-peas, drained and rinsed
2/3 cup well stirred tahini
1/4 cup fresh lemon juice, or to taste
1/2 cup olive oil, or to taste
1/4 cup fresh parsley leaves
2 tablespoons pine nuts, toasted lightly

. . . and last bit not least: Turnip pickles (lightly spiced)
