Ok, so I have this Oracle VM box installed.

What projects should I join or where should I go to "get" projects that will take advantage of the Oracle VM box?

When you open BOINC Manager->Tools->Add Project, and scroll through the list, you can see on the right what platforms they support, including the blue box for VirtualBox. If these small icons are too small for you, you can check the BOINC Projects list.
