Thank you for the suggestions. The sugar-free Popsicles look good. I have
some Weight Watchers ice cream bars in the freezer. Not the same, I know,
but close. I haven't tried them yet.

(I really, really miss ice cream.)

I've eaten sugar-free candy. My main problem is that I want to eat it all
instead of just a couple of pieces. It's a bad, old habit.

Sugar-free chocolate is probably okay to eat. Just check the carbs on the
label. I suspect (for some reason, I'm not sure why) they might have a
laxative effect if you eat too much.

I can be stuffed full and still crave something sweet, so the stuffing
solution won't work. Also, there's very little to eat these days that
would make me feel stuffed. Used to be pasta, potatoes, and bread used
to do that for me.

The Jello solution sounds best. I could divide it into small servings and
even put a little unsweetened whipped cream on it. Or in it. Mix it up.

I've also been eating the Atkins "snacks," but they're quite expensive for
me. And the similar snacks for diabetics (in the diabetic supply aisle) are
good but expensive.

Consumption of sugar alcohols affects blood sugar levels, although less than of sucrose. Sugar alcohols, with the exception of erythritol, may also cause bloating and diarrhea when consumed in excessive amounts.

When I was working on Type 2 diabetes those adds would drive me insane.
We have a water filter thingy that makes the water easy to drink, So I made
ice cubes with a light touch of just lemon, and I put that in cold filtered
water kept in the fridge. The first month I lost weight, not a lot, but some.

I found a recipe for soup that I decided to try out. I even went so far as to
buy a slow cooker, also known as a crock pot, since that's what the recipe was designed
for. (Also, I've seen a lot of other yummy-sounding recipes for slow cookers that
I might want to try.) I tried it. I like it. Here now for your entertainment and
enjoyment, and in case you want to try it, is my version of

Cauliflower, Chicken, Leek Soup

First I cut up a head of cauliflower and put it in the slow cooker.



Then I sliced two leeks (white part only) and added them to the cauliflower.



Then I cut up two pounds of chicken. I used chicken tenders. (I think dark
meat - thighs - might add more flavor to the soup.)



Then I added six cups of chicken broth. The original recipe called for "chicken
stock," and I didn't know the difference, so I used broth. Stock is supposedly
a little more flavorful. More about that later.

I added some salt and pepper and some onion flakes. The original recipe called
for onion powder. I didn't have any. I probably added about a tablespoon. Maybe
a little more.

Before I started cooking the soup, I stirred it up.



I cooked it on high for four hours.

First Result: It looked pretty boring and tasted a little bland. That could be
because I used the broth instead of stock. At this point I added some parsley
flakes - maybe two tablespoons. And then I added two chicken bouillon cubes
hoping to add some flavor. I used these:



I show them because they're larger and, probably, saltier than the more common
brand that's available.

I let the soup cook another 30-45 minutes so the bouillon would mix in.

Final Result: YUM! I'm really happy with the way it came out.



I'm sure this would have been way too salty for many people, and I could have
done with a little less salt, as well. But it wasn't ruined by salt, thank God.
It was pretty filling.

Next time I make this I might add some other vegetables. Some celery might
taste pretty good, or maybe some carrots. If you decide to make it and add more
vegetables, please let me know what you add and how it comes out.

The amount I made came out to about six servings. For me a serving is a medium-
sized bowl. Maybe 12-16 ounces. I made enough so that it would last a few days.
You can cut the recipe in half to make less. Cooking time stays the same.

This looks as if it would make a good base for a stew r caserole - as well as being a good soup:-)

Regarding the recipe I posted:

1. After a few days of reheating and eating the cauliflower bits get smaller
and smaller;

2. When I make it again I will use less liquid and cut the chicken smaller.

My GF has diabetes and was examined today and all her test values was very OK despite her overweight.
Like an athlet:)
The doctor asked her if she had any nightmares.
Strange question but apparantly if you have nightmares it means that you have a low blood sugar and if you are a diabetic you need to eat something immediately.

Quite possible. But test your blood sugar first. Sometimes it is just a bad dream.

Quite possible. But test your blood sugar first. Sometimes it is just a bad dream.
