Some times LSM makes baked beans for us, she cuts up some franks and boils
them first, then cooks them together for the last bit. The taste is huge! Alas it
is also very rich so it only happens three or four times a year.

Hi Suzie and all diabetics.
Here is one of my favourite recipes from the Australian Better Homes and Gardens DIABETIC LIVING magazine.

Mexican-style beans

Cook 1/2 chopped red capsicum (bell peppers in America), 1 small zucchini and 1 teaspoon Mexican chilli powder in 1 teaspoon olive oil for 3-4 minutes or until soft. Add 130 gram can salt reduced baked beans and heat through. Top with 2 tablespoons reduced-fat grated cheese and a few coriander leaves. Serve with 1 light tortila.

Note: I don't like hot spicy food so I only add a sprinkle of the Mexican chilli powder.

PER SERVE
protein 14 grams
total fat 11 grams (sat fat 4.1 grams)
carbs 26 grams
fiber 10 grams
sodium 727mg
Carb exchange 1 1/2
Gi estimate low


Are your baked beans the same as ours? Ours are beans with things added to
them. They're usually good enough to eat right out of the can. Well, I mean,
warmed up!



You can see there's a lot of sugar.

Try adding a small amount of cumin (spice) to your recipe. Cumin is what makes
most Mexican food taste Mexican.

I dont have any baked beans in my cupboard so next time I go to Woolworths supermarket I will get a can and post a picture for you.

@Carlos... It's just a name for a recipe, probably because it has Mexican Chilie Powder in it for flavour. It is much more tasty than heated up baked beans from a can. :-)

Food Review



This stuff is sooooooooo good, and it smells wonderful as it's cooking.

Of course it doesn't look as good as the photo on the box. In fact, if I
went solely by the true appearance of the dish as it came out of the
microwave, I'd probably throw it away! But the taste is amazing.

I went to a diabetes class at the VA Hospital yesterday and learned a lot of
good things. I also got my glucose meter and learned how to use it. Yesterday
at approximately 1300 my glucose was 140. I'd eaten breakfast at about 7:00
a.m., and had some coffee, but that's all. This morning I took a reading before
I ate breakfast and it was 145.

I also found out that I'd never had the A1C test, so I got one of those. I just
got a phone call from the dietician that my A1C was 7.6, which isn't too bad.
The goal is to get it below 7.

I set goals to keep my carbs down and to exercise (walk for one hour on the
treadmill) three days per week.

There will be a second class on June 13, so we'll see what happens between now
and then.

There is a trend in most newspaper articles and on health magazines about being a little overweight is good for you, especially if you have an accident or a major operation. Doctors do not know why.

Glad to hear they are having classes. You will learn a lot and it will let you lose the fear.

Tonight before I ate dinner I read 87. My last lab A1c was 6.1.

I must do a bit more exercise and cut back a tad on the carbs myself.

And this is the boilerplate on the lab test result form:
According to ADA guidelines, hemoglobin A1c <7.0%
represents optimal control in non-pregnant diabetic
patients. Different metrics may apply to specific
patient populations. Standards of Medical Care in
Diabetes-2013. Diabetes Care. 2013;36:s11-s66

For the purpose of screening for the presence of

Oh, there is no fear. I am not a worrier. I sort of accept that occasionally
life with throw you a curve ball.

A few years back I had a 40-pound tumor/cyst removed from my abdomen. Before
the surgery one of the medical people who saw me said he was amazed at how well
I was taking it. He said he was going to use me (and my photos) as an example
for patients in the future.

I had a lot of fun with that. I looked pregnant. I was 58 years old at the time.
I told people I had been abducted by aliens and was carrying an alien baby.

I don't know who said it; but, as far as Atkins goes, (with support for diabetes), this Link has further Atkins info. for Diabetics.

How Atkins can stop or reverse diabetes.

As Gary has said, (and I support fully), run all this past your physician in charge of your diabetic condition. Work closely with him/her.

There are MANY misconceptions about Atkins. Read The New Atkins Made Easy book, and read everything you can from Atkins.com

This Link also has information on how to start Atkins properly. How Atkins Works - Atkins 20 Plan.

Don't just take my word for it; read, and read, and read some more. As Gary said, portion control is key; but, ALSO, fresh whole foods are key. Even the support staff on the Atkins Website state that you should NOT rely solely on the Atkins frozen meals.

I hope all this helps, and doesn't frustrate you.

Low carb, High fat, and Moderate protein intake as Atkins promotes works for EVERYONE, not just Diabetics.

Keeping on Atkins is a Lifestyle change. This is NOT a quickie diet to lose weight and then gain it back again. I'm making this my Life Plan.

As of yesterday, I'm down almost 50 lbs since starting in October.

I actually walked on my treadmill yesterday. I lasted for about 35 minutes. (I'm
really out of shape.) It was fun watching the dogs trying to figure out what I
was doing. I tried to get them up there but they were having none of that.

I'm having trouble with portion control and cravings. I'm just used to eating
more and I still find myself "foraging" through the kitchen trying to find
something to eat. (Why do I think food will appear when it wasn't there the
last time I looked?!) I guess I just need to get onto a regular schedule and
get used to the smaller portions. I've been snacking on tangelos or string
cheese when I find myself feeling hungry.

Time to go grocery shopping again.
