when one makes an omelette with powdered eggs, water is needed, though I use a 1:1.5 ratio instead of a 1:2 like in the recipe I posted, which has no water otherwise.

Since powdered eggs contain no water.

Our stove looks like this one. I have one
less burner ring and there are way less of
control buttons and gauges. Sorry, no pix. it
does it's job well enough, and it is real
easy to keep clean. We like the idea that
you don't get the sort of build-up of food
like you can with the old style electric or
'gas burner' rings.

I prefer LPG/LNG for it's instant heat over electric for large cooking jobs (4+ ppl).

Electric is fine for small servings in power efficient appliances (1 or 2 ppl).

It also depends on the pots beeing used.

Amana does still make a 3000 watt microwave. It ways 94 pounds and cooks steaks well done in 50 seconds and boil water in 12 seconds.

Tonight I made what Campbell's Soup calls "Chicken Stroganoff".

I doubled most ingredients there, except for the onions, since they are flakes, I kept that at the original amount of a 1/2 cup, seems to work better, I used two 15oz cans chicken instead of the chicken breasts, cooked that in the microwave for 12 mins, why 12? Light and dark chicken chunks, better to be cautious, My microwave oven is 900w, then I drained the chicken of the excess water cooked the mushrooms, condensed cream of chicken soup(PSST brand, I'm on a budget, I used 2 cans, so I added 2 cans of water too), sour cream, margarine, onions until the mushrooms were tender enough to cut with a fork or spoon, while I was doing all that I cooked 16 oz of noodles in 4 quarts of boiling water until tender, drained the noodles, put the noodles back in the 5 quart pan, added the drained chicken to the noodles, then added the chicken sauce, stirred and served, It's not bad, better than last time, but then I used half as much of the onions as I did before.

Mushrooms, a good source of vitamin D.


That's something I didn't know.

I like to take the generic button mushrooms you can find at the grocery, take off the stems and stuff them with tuna and cheese, and then bake them.

I just ordered some Angus steaks online.

Lets see i can make it as good as it was in the 99ers in NH last june.
50 Bucks is a little much for 2 steaks but you only live once right ?

A few days ago, I ordered a 2.25 lb bag of dried powdered eggs online, cost $31.99,
they were on sale I was told, the seller sometimes tries to sell the eggs for $52.70,
another seller has a 33oz can on sale for $31.49, if the eggs were still at
$52.70 I would have bought the can, shipping is FREE on both.

I put a little too much white pepper in some soup, and wow! White pepper has a different heat profile than red pepper flakes. The white pepper burns the back of my tongue and makes my head itch, lol.

Yes. White pepper is really different and cannot be used interchangeably with black pepper or with cayenne pepper. I made a similar mistake substituting white pepper for black pepper in a recipe once. The results were not good.

BELGIAN BEER WAFFLE SUNDAE
The Belgians do a couple things exceptionally well: Waffles and Beer. We’ve combined them for the ultimate ice cream sundae.
Ingredients:
Waffle:
2 cups self-rising flour
1 bottle (12oz) beer (we like Triple Karmeleit)
½ cup unsalted butter, melted
¼ cup milk
2 eggs, separated
1 tablespoon honey
1 teaspoon vanilla extract
 
Lindemans Framboise Lambic Sauce (from Merchantduvin.com):
2 pints fresh raspberries
0.25 cup sugar
1 tsp lemon juice
2 tsp Lindemans Framboise Lambic
 
1 pint Peach Lambic ice cream
 
Directions:
 
Begin with sauce. Combine raspberries and sugar in saucepan. Cook under low heat until raspberries are broken down – about 10 minutes. Remove from heat and add remaining ingredients. Strain to remove seeds. Set aside.
Preheat a waffle iron according to manufacturer’s instructions. Combine flour, beer, butter, milk, egg yolks, honey, and vanilla in a large bowl; stir until the mixture is smooth. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter.
Spray preheated waffle iron with non-stick cooking spray. Ladle the batter into waffle iron. Cook the waffles until golden and crisp.
Cut waffles to desired size and place in a bowl. Drizzle 2-4oz Raspberry sauce over warm waffle. Scoop 1-2oz Peach Lambic ice cream on top. Serve immediately.
