I think I made a good decision yesterday. I looked at the next carton of eggs in my fridge and its sell by date was mid-April. So were the next three. I skipped them and moved on to a carton dated late May. (Then I found that the ones toward the back of the fridge were frozen.)

The April ones will go in the garbage when I take it out Sunday night.

They were cheap. They got rather expensive in the last couple of years, so when I saw them come down I bought a lot before they went up again. Then I didn't use them as quickly as I expected.

You can freeze eggs to be used later. Google it to find out the best way.

Next time you stock up on cheap eggs you won't be throwing them away later.

It's not possible to freeze egg in its shell, because the shell cracks at freezing and the yolk becomes rubbery.
But eggs can be frozen and thawed without sacrificing quality if you crack the egg and mix together the yolk and the whites before freezing.

There are soo many weird ice creams on the market so why not:)
Perhaps we will see Gelato di Uova or some other brand on the shelves soon.

I also googled it:)
But I have also stayed as a kid in a farm for three summers where they had hens among cows.
Taking the eggs from the hens is a bit a ...
Anyway, one hen dropped an egg right in my palm.
With a soft and warm shell and also slimy.
Don't remember if we ate so fresh eggs.

Actually trendy. It's the uber-hip urban thing to do. I have friends who do it, but spending all that time and money on raising 3 or 4 hens for some eggs and making some sort of statement is not my cup of tea.

It is trendy in our urban neighborhood as well. I don't mind hearing roosters in the morning. The nearest one is down the street a bit, so not nearly as annoying as our neighbor's dogs who want to tear me to bits every time I take out the trash.

I've found that fresh eggs at the Farmer's Market are not always as "fresh" as I'd like them to be. Sometimes they are excellent, and sometimes they are stale with some rotten "surprises".

I can easily go through a couple of dozen eggs in a week when I'm on a baking frenzy. An angel food cake takes a dozen whites. The yolks can go into sponge cake rounds, which I bake and freeze to be frosted later when I need a quick homemade dessert. If I make a couple of Italian tortas (sort of like a crustless vegetable quiche) that's another six to eight eggs per application. Bake a lemon pie and that's another 4 eggs. Make Salad Nicoise and I'm hard boiling more eggs. Before you know it, the cartons are all empty.

I seem to be in luck. My local grocery store stocks "Fruit Cake" fruits. I can get them fancy and chopped up together or each whole and separate.

A few of my neighbors have hens, as well. I wouldn't be able to leave the
hens alone in the back yard in some small enclosure. It's just not how I
am with animals.
