Had a McRib yesterday for lunch. I was never a big fan, but this one was actually pretty good. I liked the crunch of the onions and pickles. The bbq sauce is just too sweet for my taste.

I just now have to get a fryer soon enough for 10lbs of chicken leg quarters, I have the chicken, just no fryer, so the chicken stays in the freezer for a while.

I did find a fryer on Amazon, the Big Boss 9063 16qt 1300w fryer, uses almost no oil, comes in Red or Silver for about $90.00(elsewhere in Black too), supposedly made in France, supposed to cook quickly. Of course I need to get a cutting board and some kitchen shears, since I don't have those either.

Is that a serrated blade? If so I have one, cuts thru a cardboard tube, My Mom would be horrified, the knife was Hers when She was alive. Hehe.

Bake 'em!!!

Loosen (but don't fully remove) the chicken skin with your fingers. Poke a little butter mixed with the herbs of your choice under the skin. People who like things salty, instead of buttery, might try soy sauce in place of herb butter. Throw the chicken quarters into a baking pan and bake at 375 degrees until the internal temperature is 165 degrees.

Problem solved.

Yes, I do, I just have to find a pan and a rack that goes in the pan, as I mentioned already, they're in a box in a bedroom that I use for storage, until then the chicken will just stay in the freezer. And on top of that I have 4lbs of rice, stuffing, jellied cranberries, canned veggies(corn, green beans and spinach), powdered potatoes(needs milk, that I don't have) and rice a roni, all of these got handed out at the local food pantry. I had some cranberry juice concentrate, I drank that after mixing that with some water.

About the only thing that is missing is a Turkey, no check that, that would be Me. ;)

I also have a couple of Hams, fully cooked, one's in the freezer and the other is in the refridge, of course I'll have figure out what to heat some of the stuff that I have in, since I normally keep dinner down to two pans, veggies and fish. Ham, chicken(have large pan), stuffing(have pan), corn, green beans(no seeds, combine corn and beans into one pan, its just Me here, so who cares), mashed potatoes(milk is needed, have pan, somewhere), I'm low on margarine too. This all will just have to wait for something to turnip... I make My dinners in the microwave, the chicken I can bake, the mashed potatoes, all 2lbs of it, I'll have to look for a 2nd pan, since the directions say to heat.
