I don't use the XXXXHot Chillies directly, I slice them(always using gloves) and fry them in Bacon drippings then strain out all the pepper, especially the seeds, and then brown the diced pork shoulder for the Chilli in those drippings. The meat picks up some of the heat but also the underlying smokey flavor of the pepper. The bigger the batch of chillies you fry, the more 'heat' imparted to the meat. One person always liked to get all boozed up on pay-days, then he came down to where I worked and started fights with all my peace officers work mates who were working the late shift!
