Ok example of a WU is:

On my Win7 64-Bit running Lunatics 43 (not 43A). Says it's running SSE2--is that the way it should be?

If you look with Task Manager, AP7_win_x64_SSE3_CPU_r2692.exe should be shown as running that AP v7 task. The reason you're seeing sse2 is because the project's CPU app for 64 bit Windows has that as its plan class name. The installer has a set of app_version sections which match all the expected previous work which might be on the host, for new work the first one will be used, and it is plan class sse2 for 64 bit Windows.
