Chocolate sauce
Ingredients

225g/8oz dark chocolate, broken into pieces

80g/3oz caster sugar

120ml/4fl oz double cream

60ml/2fl oz hot water

Preparation method

Put all the ingredients into a thick-bottomed saucepan, or Baine-Marie (which I prefer as it gives a really uniform gentle heat with no chance of a hot spot).

Put on a gentle heat and stir until the chocolate has melted and the sauce is hot.

The above is good, but it is even better if you can get double Jersey Cream which is even creamier....

Much as I love chocolate, never tried dipping bacon in it. Cheese sauce,, but not chocolate.....

And now I'm hungry for a dish a local restaurant used to make, before they stopped opening for breakfast - The Railroad Scramble.
4 eggs scrambled with diced crunchy bacon, grilled sausage, diced red and green onions and bell peppers. Served over chunks of grilled red-skin potatoes ("country-fries") and covered with Hollandaise sauce.
