My mother made a lime jello salad that used pineapple rings in the the top with cherries in the center of the rings, the lime jello had cream cheese and almonds mixed in, as long as one used premium pineapple it was great, cheap pineapple made for chewy tough rings, yuck.

Canned pineapple is basically cooked pineapple. I suppose that it is possible that the cooking process destroys the enzyme in pineapple (and mangoes???) that causes the denaturing of proteins in gelatin.

Also, it sounds like your mom put the pineapple at the top of the gelatin mold, rather than throughout it, thereby minimizing the contact between the fruit and the gelatin.

Simon, if you happen to come up for air from all of your studies and you know what the deal is with pineapples and mangoes, please educate us on this food science topic.

Sorry it took a while, i've been on Holiday in Egypt.

The enzyme in Pineapples is bromelain, which causes longer protein chains to unlink. Gelatin is largely comprised of collagen, which is why raw pineapple causes gelatin to liquefy.

Most enzymes (like all proteins, excepting those with large numbers of cysteine groups) break down or 'denature' at temperatures above 60 degrees C. So if the pineapple has been cooked above this temperature then it should (touch wood) be fine.

I'll go back into the woodwork now. :)

Peppered Herb Beef Rib Roast Recipe

The list of ingredients is on McCormicks page, since the recipes ingredients can be tailored from 1 serving to 12 servings.

1. Preheat oven to 350°F. Mix seasonings in small bowl. Place meat on rack in shallow roasting pan. Press seasoning mixture evenly onto surface of meat.
2. Roast, uncovered, until internal temperature reaches 135°F for medium-rare (1 3/4 to 2 1/4 hours) or 150°F for medium (2 1/4 to 2 3/4 hours). Cover with foil and let stand 15 minutes before carving. (The temperature of the meat will rise about 10° during standing.).

I had Lutefisk yesterday:)
It is made from aged stockfish (air-dried whitefish) or dried/salted whitefish (klippfisk) and lye (lut, sodium hydroxide (NaOH) or historically potassium hydroxide (KOH).). It is gelatinous in texture. Its name literally means "lye fish."

Shellfish burgers


Ingredients

8 langoustines
2 lobsters
8 oysters
6 scallops
2 egg yolks
1 teaspoon French mustard
2 tablespoons breadcrumbs
100 g trout caviar

Beurre Blanc sauce with dill

2 shallots
1 cup white wine
2 tablespoons white wine vinegar
The broth from oysters
0.5 ml whipping cream
100g butter, softened
1 tablespoon dill or regular dill, chopped

Remove the meat from the lobsters and lobsters.
Open the oysters (make sure to save the broth).
Then cut up the oysters, mussels, meat from the lobster and langoustines in 1/2 cm pieces.
Mix the meat in a bowl with the yolks, breadcrumbs and mustard.
Season with a little salt and freshly ground white pepper.
Allow to stand in the fridge for 2-3 hours before frying. In the meantime, do the sauce.
Shape into burgers and fry on both sides in butter for 3-4 minutes.

Serve with Beurre Blanc sauce.
Chop the shallots and lay down in a small saucepan with the wine, broth and vinegar.
Let boil down until about half.
Pour in the cream and bring to a boil.
Then mix small dabs of butter, stirring occasionally.
Season with pepper and possibly salt and dill.

I don't know specifically about Medieval Theater, (or Theatre), for a dinner's sake. However, I do go to the Renaissance Pleasure Faire every so often. It is held once a year; and they do sell food. I try to get a turkey leg when I go there. They also have interesting things like "Toad in a hole", and more; however, I've not yet tried those. Food is usually hand held; no silverware, except for deserts like Gelato, and ice-cream. There are MANY alcoholic drinks for sale there, as well. RPF is a great place to go to get away from it all. :-)

In the Middle Ages they ate mostly porridge and bread.
In addition, they ate root vegetables like turnips, carrots and turnip.
The meat was fresh salted, dried or smoked. It meant that they became thirsty and drank several liters of beer per day. Though it was weak beer.
