When my computer on iMac is logged out is SETI@Home using 100% of the GPU?

I want to let SETI@Home use 100% of the iMac when I am logged out of computer overnight for 16 hours or more.

Right now, Seti at home does not use the GPU to crunch any data on the macs. They are working on an application for that but as of yet, it is not available. For boinc to use your CPU when no one is using the computer...One option is to go to the Boinc task manager. Click on view and select advance view. This will give you an expanded Task Manager. Click on tools to get the pull down menu. Click on Computing preferences. On the first page "processor usage" there are a couple of option. Here you can set how long after someone has stopped using the computer, that boinc can start to run the project. Another option is select the hours between which Boinc can run. Below that line is the area where you can select which days to apply this to if you only want certain days.

For the computer processor to be available for SETI overnight should Energy Saver be 'never' when the computer is not in use?

Computer sleep is on for 15 minutes in Energy Saver for iMac.

Wake for network access is on.
Display sleep is at 15 minutes is on.

I would set Computer sleep to never, and display sleep at 15 minutes. Make sure the Put hard disk to sleep when possible is unchecked. Check Wake for network access. That should allow for Boinc to work when you aren't using it.

Is SETI@HOME dead? Boinc won't download any tasks to my iMac, although Rosetta Stone works.
When I click on Update it always says "Communication defered."
I am always connected to the internet.

No, SETI@home is not dead. Sounds like there may be an issue with it on your iMac. Suggest you follow the advice offered in this thread: http://setiathome.berkeley.edu/forum_thread.php?id=75179
