Please explain what you mean by the term "pastry paper". I call it something different but both you and Chris may be correct. |

I would give him the win. I see that it has different names in different parts of the world. I see it's call ed Baking Paper, Non-stick paper, Bum Paper, Cooking Paper, Greaseproof paper as well as parchment paper. |

Is this of any help? I have always called it parchment paper. I use it all the time when baking. Besides coming in sheets on a roll, it can be purchased in rounds that fit into the bottom of cake pans. The bleached (white) paper works better for some baked goods and the unbleached (brown) paper works better for other baked goods. It all depends on how much heat you want drawn to or reflected away from the bottom of what you are baking. |

Wow! Are those half-sheet pre-cut rectangles? I see. A half sheet is the max most of us home cooks can get into our narrow little ovens. I have never been a fan of commercial style home kitchens, but I do understand why some might be tempted to go in that direction. |
