Is there any way for me to set BOINC so it only works on 1 task at a time instead of 3 separate ones? like 100% CPU power on 1 task instead of spread of 3?

If you mean, can you do multi-core processing on a single workunit, no.

You CAN limit the number of CPU cores S@H will use via the computing preferences option on the tools dropdown. The third workunit you're seeing is running on your GPU, not the CPU.
