I have my BOINC Computing Preferences set to "Maintain enough work for an additional 10 days", but it is only maintaining enough for a few days. This is a problem because the SETI servers keep going down and I run out of Fermi units to process.

Is there a fix or workaround for this issue?

I'm running an EVGA GeForce GTX 480 SuperClocked.

Run another project. There isn't going to be any work from Seti for the next month. See the front page news and the threads by staff in the technical news forum.
