I installed boinc client in my MAC 10.5.6, and running Einstein@home, I want set my screensave of mac system use the Einstein@home, like this:
http://einstein.phys.uwm.edu/starsphere.php

In screensaver, there have "BOINC", but it not shows the Einstein@home.

That is precisely how the screen saver function works. You need to select BOINC as your screen saver, and BOINC will show the screen saver of the active workunit being crunched by your system. So if you have multiple projects (SETI@Home & Einstein for example) and your system is only working on SETI workunits, it will not show an Einstein screen saver until an Einstein workunit is being processed.
