Chris,
In general, you need to search the project website for each project to see if they have published scientific papers about their project. Some projects are very good, they have lots of info and its easy to find. But some projects are very bad with info or they might not have any scientific papers.

On the BOINC website, some projects have submitted links to scientific papers they have produced. But this is not a complete list, its just the projects that volunteered to add their papers to the list.

On the front page of the BOINC website, the link is called "Papers and Talks"; http://boinc.berkeley.edu/trac/wiki/BoincPapers

Here is another list with project specific papers; http://boinc.berkeley.edu/trac/wiki/ProjectPapers

SETI@home has a few listed here; http://setiathome.berkeley.edu/sah_about.php

Another point worth remembering is that even if you find scientific papers on a project website, they can be very difficult to read. Scientists are not journalists and sometimes you need to be a rocket scientist just to interpret what they have written.

John.
