Can anyone advise me on how to set up my preferences to download and run just one task at a time as the program used to when using the classic interface ?

For some reason, even after aborting a second task, the manager downloads and starts a second automatically.

Your account -> general preferences -> connect every X. The best that can be done is to set this to very small (0.01 is about 15 minutes). With a setting of 0.01, a new task will be download just before the first is complete.

If you have 2 (or more) CPUs, BOINC will download enough work to keep all of the ones that you allow busy. The setting for how many to allow is at Your account -> general preferences -> On multi processors use at most X. The default for this is 2. If you do have multiple CPUs, then you can get more processing done as BOINC allows one process / CPU, and processes do not take more than 1 CPU each.
