The BGE can do anything your oven can do and then some. Couple of accessories you should get with the Egg is the Plate Setter and Pizza Stone. The Egg Mates are nice thing too. Email me if you have any specific question.

There is a better place to get all these answers, Like Big Green Egg and The Ceramic Guru. I will answer your questions though.

Unless you are planning on catering or have a need to cook 80 pounds of pork in one cook the Large will be sufficient for 90% of all cooks. Most of us have built our own tables, but the Egg Nest is probably the #1 Accessory with the Plate Setter and Pizza stone next.

All the hinges and bands on the BGE have been super improved over the years. No worries there; however, the XL without the spring assist can be rather unruly to open and close. The XL weighs in at 200 pounds. The lid is about 60-70 pounds of that.

The Egg will do Lo n Slo cooks at 220-250 degs. just as well as it will sear a Steak or Bake a Pizza at 650-700 degs. The picture Tim posted has two 7 pounds Pork Butt on it and the two yellow things you see are my eggs for my breakfast. My fellow TFFE members are sucking down three pounds of sausage I took off the my XL just before Tim took the picture.

The BGE will spit fire if you are not careful. The Kamado and Grill Dome will too. It the nature of the beast. Volatile Gases can build up in the dome and when you callously open the lid you allow the fresh air to hit these gases. Combine that with the heat and POOF you have joined the singed arm hair club.
With a wee bit of caution you can avoid the Flashback.

WARNING: Big Green Eggs are addictive.. Many of us Eggheads own more then one.
