Is there any way to schedule BOINC to work say from 6:00 pm to 9:00 am Monday through Friday but work all day Saturday and Sunday?

Simple answer is no. BUT you can set the Program manager Commands menu 'Run always' to override your preferences during the weekend.

Frankly, unless you run graphic intensive or number crunching software, you can probably leave it that way all the time with minimal impact on your system.
