My best invention - but I probably dont have the IP lol!. Recipe 12 - Now available at Cafe Seti! <font>Just a fantastic sauce for chicken!</font> Roast 2/3 chicken breasts in the oven - make sure they are covered - for 45 minutes. 180 C. While this is going on make the sauce - Take half a Spanish Onion and chop finely. Slice up 4/5 rashers of smoked back bacon Gently fry the onion in olive oil until brown and add the bacon. Fry for 3-4 minutes. Turn down the gas. Add 1 tin (15oz) size of chopped Tomatoes 2 Garlic crushed garlic cloves 1 Chicken Oxo cube (or whatever chicken stock you have) 2 Tablespoon Vodka Black pepper to taste Some folk add a little Basil...its up to you....murder is unlawful remember lol! Simmer for 20 minutes Add this sauce to the chicken in the oven and keep covered. At the end of 45 minutes remove the cover and sprinkle Mozzarella cheese over the top and grill until light brown. OK This one I can do :) In a deep frying pan (Wok works best): Cover bottom of pan with a light coat of Olive Oil Add Oregano, Basil, fresh Garlic and Onion to taste Saute over low heat till Onion is opique. Add one Skinless Chicken Breast slided into cubes. Add several Sliced Fresh Mushrooms (optional) When Chicken is done add: 1 small to medium Zucchini 1 small to medium Yellow Summer Squash 1/3 to 1/2 cup of your favorite Marinara Sauce (I like to add Garlic and Basil Sauce or my own homemade sauce) Several Drops of your Favorite Hot Sauce. (I use Habenaro Sauce) Cover and simmer till Squash is tender.. Serve covered with Mozzarella. (This recipe does qualify as Low Carb and Low Fat) [END] This recipe works well with Scallops, Italian Sausage or Andouille Sausage[ENDEDIT] |

I think I must just try that.</blockquote> Ian if you can get the Andouille Sausage in the UK you should try that; however, You might want to (I don't) cut back on the hot sauce with this sausage :) Andouille (An Doe Wee) is native to Louisiana and can be quite hot all by itself. |
