I have a computer at my house that doesn't have internet access. Ever month or so I bring it to a LAN party that does have internet access. Currently I have SETI Driver running and caching enough units to last me that month, but I've noticed that units uning BOINC have a 2 week deadline. Is there any way to change it so I can convert this computer to BOINC with 1 month intervals, or is there any plans to change it?

No. You might want to try a project with really long deadlines (and long crunch times as well). Climate Prediction.Net (CPDN) is planning on moving to BOINC.

In the mean time, could you convince your friends to allow you to connect up once a week?

To expand a bit on John McLeod's answer: After the expiry date, the server assumes it's not going to get an answer back, and gives it to another user for processing. As mentioned elsewhere in this forum, results for a particular work unit are not "accepted" until three different users have processed it and given the same answer. (Also, no one receives credit until this happens.)

Presumably, increasing the deadline would just slow the whole process down, and the whole project is oriented around the assumption that the vast majority of supporters connect fairly frequently, and any caching is more to get around temporary server or network problems.
